Sun Dried Tomato Caprese

This was always my favorite salad to sell when I was still professionally serving in San Francisco and this dressing perfectly represents the salad basically since it is made from the exact same ingredients that comprise a caprese salad. I use it back over an authentic caprese for s double punch. Add chicken to it and you have a meal!
